Hotel Butcher

Marriott is seeking a skilled Butcher to support our culinary team in delivering exceptional dining experiences. The Butcher is responsible for receiving, trimming, cutting, and portioning meats and poultry to exact specifications for restaurants, banquets, and events. This role ensures strict adherence to food safety, HACCP, and sanitation standards while maintaining accurate inventory and minimizing waste. The Butcher collaborates closely with chefs on menu execution, operates and maintains butchery equipment safely, and upholds Marriott's commitment to quality, service excellence, and teamwork in a fast-paced hospitality environment.

Responsibilities

• Receive, inspect, and store meat deliveries according to Marriott safety and quality standards
• Butcher, trim, portion, and grind meats and poultry to menu and banquet specifications
• Maintain strict food safety, sanitation, and HACCP procedures in all preparation areas
• Label, rotate, and manage meat inventory to minimize waste and support cost controls
• Collaborate with chefs on menu planning, special events, and custom cuts
• Operate and maintain knives, grinders, saws, and other butchery equipment safely
• Ensure consistent portion sizes and presentation for restaurant and banquet outlets
• Monitor product quality and report issues to kitchen leadership
• Assist with daily cleaning, breakdown, and organization of cold and prep rooms
• Support training of kitchen staff on safe handling and storage of meat products
